Spicy Maple Walnuts with Papaya and Ginger

In his third installment of Building a Power Pantry, Adam Kelinson introduced a few key nuts and seeds every athlete should keep within reach.

This recipe is an easy way to turn one of the most nutritious nuts into a creative topping for sorbet or ice cream, or even mixed with quinoa or couscous. Enjoy!

Spicy Maple Walnuts with Papaya and Ginger

makes 4 cups

Ingredients

  • 4 cups raw walnuts, soacked 1-2 hours in water
  • ½ cup pure maple syrup
  • 1 cup diced, crystallized ginger
  • 1 cup diced, dried unsweetened papaya
  • 3 tablespoons lime juice
  • 1 tablespoons red pepper flakes
  • pinch of sea salt

Preparation

Drain walnuts well and place in mixing bowl. Toss with remaining ingredients, making sure that everything is evenly coated.

To bake, set oven on warm or the lowest possible setting. Line a sheet tray with parchment paper and spread nut mixture evenly on top. Place tray in oven and leave all day or overnight, until dry.

Store in an airtight container.
