Serves 1
1 Bundle Soba Noodles
1/2 Bunch Kale torn into pieces
1 T Toasted Sesame Oil
1/2 T Tamari
1/2 T Mirin
1 T Lime Juice
1 T Scallions, sliced
1 T Black Sesame Seeds
1 T Crushed Red Pepper (optional)
For Dumplings
1/4 lb Ground Pork (or chicken)
1/2 T Toasted Sesame Oil
Salt
Poaching Liquid
1/4 C Soy Sauce
1/4 C Water
2 Cloves Garlic, crushed
1 Small piece Ginger, peeled and sliced
Directions
1. Bring small pot of water to Boil
2. Prepare Poaching Liquid, Bring to Boil and then Turn down to Simmer
3. While water comes to boil prepare dumplings:
+Leave pork on butcher paper and add toasted sesame oil, and salt and mix with hand
+Roll pork into small balls and set aside on paper
4. Add Soba Noodles to water and prepare according to instructions on package
5. Place Dumplings into poaching liquid and cover. Cook for 3-4 mins occasionally turning them
6. Add Kale to Colander and strain Soba Noodles onto Kale
7. Place Noodles and Kale into bowl and add Toasted Sesame Oil, Tamari, Lime Juice & Mirin & Toss
8. Top with Dumplings, Scallions and Black Sesame Seeds
